Courses

Students enrolled at Szamos Chocholate School will learn all about the art of chocolate manufacturing from basic level skills to professional trade secrets.

Chocolate School Full Programme

Bonbon Moulding (3 hours)

Number of participants: Groups of 4-5 people

The price of each course includes the gift packaging of the finished chocolates, generous samples of the pralines prepared during the course, the recipes, crackers and refreshments, as well as the use of necessary tools and ingredients.

During this course we will get to know the basics of making chocolate bonbons, based on the original Szamos recipe. We learn what is tempering, how to make glossy and crispy chocolate, everyone can get to know the technique of tempering on a marble slab in practice and can mould the melted and tempered chocolate into shapes used by professional chocolate masters, which is a unique experience. For the fine and stylish small masterpieces we prepare two kinds of base creams, a marzipan cream loosened with Hungarian brandy and a soft milk chocolate cream with honey. The chocolate master will help us fill the moulded shapes with the cream, then we cover the desserts with tempered chocolate, a.k.a. „footing” and after cooling, we remove the pralines from the moulds. In the end we just have to taste the freshly made, crispy bonbons.

Preparing Truffle – (3 hours)
Number of participants: Groups of 4-5 people
The price of each course includes the gift packaging of the finished chocolates, generous samples of the pralines prepared during the course, the recipes, crackers and refreshments, as well as the use of necessary tools and ingredients.

During this course we will get to know the basics of truffle making, based on the original Szamos recipe. We will learn what is tempering, how to make glossy and crispy chocolate and what the most basic mistakes are during the pre-crystallizing process. We will create the heart of the truffles, that is to say, we will cook two sweet creams flavoured with different kinds of milk- and dark chocolate. We will, in technical jargon, panel the creams and after cooling, we dip them in tempered chocolate. Our chocolate master may give a taste of the truffle decorating process as well. We decorate them with sprinkles and learn how the melted chocolate strips are put on the dessert. When decorating the different flavoured and shaped truffles, only imagination is the limit.

Team building - Partner day

„Chocolate School Team Building” deal (2.5 hours)
Preparing artisan chocolate with guidance from a professional Chocolate Master
Number of participants: min. 6 max. 20 people

Everyone who participates can try their hands in artisan bonbon making with guidance from the Szamos Chocolate Master as part of our Chocolate Workshop, which involves bonbon moulding, tempering, preparing and filling the cream. The Chocolate Master holds a short presentation on the workshop, the tools and the „tricks” of chocolate tempering. After this, the participants themselves prepare marzipan filled bonbons which they can taste and they can take home some of the finished chocolate in a little box as a gift. In case of a group with large head count, the participants are divided into smaller groups of 4-6 people, and each participant can try one stage of preparing bonbons in practice, so that the group will eventually make their artisan bonbons together, in a real chocolate manufacture.
